In 1827, confectioner Bélisaire Boissier created the Boule candy, whose round shape symbolizes the city of Paris. He first developed a version with Montmorency cherries after extracting their aroma, much like essential oils are extracted from flower petals in Grasse. Over time, the Boule candy was enriched with multiple flavours, such as rose.
